Mediterranian Style Quinoa Salad

A delicious mediteranean style salad featuring one of the most talked about super foods available....quinoa.

Quinoa Salad

It seems as though everyone is just starting to accept quinoa as a mainstream food. We've adopted it as a staple over the past few years and have really enjoyed it, particularly as a rice substitute and in Salad. Below is my "go to" salad recipe featuring quinoa.
*Please note that the quanities listed are those that I prefer, be sure to adjust to your own tastes accordingly.

Ingredients

1 tomato roughly diced
1/2 of a cucumber roughly diced
1-2 cups quinoa
About 10 Kalmata olives, sliced. (If you don't have Kalmata Olives feel free to use black ones)
1/2 of a red onion roughly diced
A few handfuls of spinach leaves
1/2 cup feta cheese
A few tbs Olive Oil (optional)
1-2 tbs Balsamic vinegar (optional)

Instructions

1.) Cook the quinoa as you would rice. (1 part quinoa to 2 parts water)
2.) Add all the vegetables, olives and feta to the cooked quinoa. (The quinoa can be either warm or chilled, it simply depends on your preference)
3.) The Kalmata olives and feta should provide ample flavor for this meal, however if you want a bit more, mix the olive oil and balsamic into the salad as well.

That's it, it's a super easy salad to make and it is surprisingly tasty. I always make more than I need so as to have a hot salad for dinner and a cold one for lunch the next day.

Great recipe using Quinoa, a person could omit the Feta Cheese and use a Soy substitute to make this vegetarian too!

I have not even ate Quinoa but, I am a person that likes to try new things. I will keep a eye out for it and then try your delcious sounding recipe. Thank you for sharing.:)
