Quick and Easy Chicken Pita Sandwiches

Serve these easy to make chicken pita sandwiches with cucumber yogurt sauce at your next lunch with friends. It's a quick and easy recipe that will definitely add an extra special touch to your lunch and impress your friends. Not only will you impress but it's a healthy alternative to fast food take out.
A Quick and Easy Healthy Lunch
Chicken pita sandwiches are one of my favorite sandwiches to prepare especially when I am having guests over for a lunch. It's quick, simple, and definitely will impress. It is also a lot healthier than having some fast food deep fried sandwich. If you want to make it even healthier, you can always use whole wheat pita bread and non-fat yogurt. This recipe is a must have for those who like to have healthy interesting foods that are quick and easy to prepare.
Ingredients
If you're planning on making this a couple times a week, you can always make the dressing ahead of time and keep it refrigerated until you're ready to make your sandwiches. Below are the basic ingredients for the Middle Eastern version, but feel free to change it up and add some green peppers, cucumbers, mushrooms, or any other veggie that you like on your sandwiches. For a healthier alternative, use non-fat yogurt and whole wheat pita bread or leave out the chicken for a great fresh veggie sandwich.
Ingredients:
1/2 cup plain yogurt
1/4 cup finely chopped cucumber
1/2 teaspoon dried dillweed
1/4 teaspoon dried mint, crushed
4 large pita bread rounds
4 lettuce leaves
6 ounces thinly sliced fully cooked chicken breast
1 small tomato, thinly sliced
1 small onion, thinly sliced
1/3 cup crumbled feta cheese
Preparation
1. For dressing, in a small mixing bowl stir together yogurt, cucumber, dillweed, and mint. Set aside in fridge to allow for chilling while you're preparing the rest of the ingredients.
2. For each sandwich, place a pita bread round on a plate. Then top with lettuce, chicken*, tomato, onion and feta cheese. Spoon dressing on top or serve on side.
3. Roll up the pita bread. Secure with wooden toothpicks.
4.Serve immediately. Makes 4 servings.
*Prepare chicken however you like, grilled, broiled, or baked. Season with a little salt and pepper or your favorite spices. You could even buy a pre-cooked rotisserie chicken from the store for even faster and easier preparation.
How to Serve
For a healthy light lunch, serve sandwiches with a tasty greek salad. If you're feeling a bit naughty, then have a side of sweet potato chips or french fries.It's a wonderful way to add some Middle Eastern flavor to your every day cooking as well as a healthy alternative to fast food.
